What could be better than fresh farmhouse bread, still warm from the oven with homemade butter? Sometimes you don't need elaborate dishes to excite your taste buds. A simple loaf of bread, the way it has been made for centuries, is often just the thing. Whether for breakfast with jam and a cup of coffee or for a hearty snack after a long hike, fresh farmhouse bread is always a delight.
Try this simple recipe and you might discover that sometimes homemade is best.
Farmhouse bread
Ingredients
• 500 g rye flour
• 500 g wheat flour
• 1 cube of yeast
• 1 tablespoon of salt
• 1 pinch of sugar
• 20-30 g bread spice (fennel, coriander, caraway)
• 700 ml lukewarm water
• 1 egg to brush on top
Preparation
First mix the two types of flour in a large bowl. Then dissolve the yeast in a little bit of lukewarm water and add it. Leave to rise for about 10 minutes.
Now gradually add the bread spice, salt, sugar and the remaining water.
Knead the mixture until a smooth dough forms that comes away easily from the bowl.
Cover with a cloth and leave to rest in a warm place for about an hour.
After the dough has risen, divide it into two equal parts on a floured work surface and shape into loaves. Place them on a greased baking tray and brush with the beaten egg.
Preheat the oven to 180°C. Put the loaves in the oven and bake for about 40 minutes. To test, tap the bottom of the bread, if it sounds hollow, it's done!
Making butter yourself
Ingredients
400 ml whipping cream (30-35% fat)
Preparation
Whip the cream in a bowl with a hand mixer how you usually would. Just keep beating until the butter separates from the buttermilk after about 10-15 minutes.
Then strain the buttermilk, preferably with a cheesecloth (if not available, use a fine sieve), pressing the butter gently so that as much buttermilk as possible comes out.
Then put the butter in a bowl of cold water and rinse out the remaining buttermilk. Repeat this process with fresh water until the water remains clear.
Finally, squeeze the butter again completely in a dry bowl until no more liquid comes out.
Now just put the butter in a suitable container and you're done!
