Zillertal grey cheese soup is a traditional Tyrolean dish. Grey cheese is made from sour milk, is tangy, rich in nutrients and very low in fat. It is known to many as an ingredient in Tyrolean cheese dumplings. But grey cheese soup has also been rediscovered as a rustic, spicy delicacy, not only in the Zillertal. Nowadays, it is again on the menu in many mountain huts.
We show you here how to prepare a delicious grey cheese soup.
Ingredients for 4 persons
- 200g grey cheese
- 50g butter
- 2 tbsp. flour
- 100g onions
- 1 litre beef broth (or vegetable broth)
- 200ml cream
- salt and pepper
Preparation
Prepare the beef or vegetable broth the day before. Small tip: at a pinch, instant diced soup will also do.
Finely dice the onion and sauté in the butter until translucent. Then stir in the flour. Pour in the cold soup.
Now dice the grey cheese and add it to the soup together with the cream. Bring everything to the boil once and then simmer on a low heat for another 15 minutes. Stir from time to time.
Blend the soup with a hand blender, add salt and pepper to taste. Serve the grey cheese soup with a piece of fresh grey cheese and some lettuce or parsley. If you like, you can also add croutons.
